Birthday Cake Energy Bites
Ingredients
- 1/2 cup cashew butter
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/3 cup packed fine blanched almond flour
- ¼ cup protein powder
- ¼ cup ground flax seed
- 2 tablespoons sprinkles
- Extra sprinkles, for rolling
Instructions
- In a medium bowl, add cashew butter, maple syrup, vanilla extract and almond extract and mix with a spatula until well combined and smooth.
- Next add in almond flour, ground flax seed, and protein powder. Mix well until combined and a dough begins to form. If the dough is too dry, add in a tablespoon or two of almond milk. If dough is too wet, add another tablespoon or two of almond flour. Lastly, fold in sprinkles.
- Use a cookie scoop to form the dough and then roll into twelve balls. If desire, you can roll each ball into sprinkles. Place energy bites on a baking sheet lined with parchment paper and place in the freezer for 30 minutes. Once they’ve hardened a bit, you can transfer to an airtight container and keep them in the freezer for up to 3 months.
