Ingredients

Pesto Chicken
  • 2 boneless, skinless chicken breasts
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 4 tbsp kale pesto
Cauliflower Gnocchi
  • 12 ounces frozen cauliflower gnocchi from Trader Joe’s
  • 2 tbsp Italian Style Soffritto Seasoning Blend
  • 1 tbsp olive oil
  • Top with marinara, bruschetta, or sauce of choice!

Instructions

To cook the chicken:
  1. Preheat the oven to 425 F. Line a baking sheet with parchment paper.
  2. To prepare the chicken, pat the chicken breasts dry with paper towels. Cut the chicken breasts horizontally down the middle. Season both sides of the chicken.
  3. Place the halved chicken breasts on the baking sheet. Top each piece with a tablespoon of pesto and use your spoon to spread it over the chicken.
  4. Bake in the oven for 20 minutes, or until well done.
To cook the cauliflower gnocchi:
  1. Place a piece of parchment paper in the tray of the air fryer. Place the frozen gnocchi in a single layer on the tray. Lightly drizzle or spray the gnocchi well with olive oil. Season with the soffrito seasoning blend.
  2. Air fry for 12-14 minutes at 400°F or until crisp. Enjoy with sauce of choice!
