Pesto chicken cauliflower gnocchi
Ingredients
- 2 boneless, skinless chicken breasts
- ½ tsp kosher salt
- ½ tsp pepper
- 4 tbsp kale pesto
- 12 ounces frozen cauliflower gnocchi from Trader Joe’s
- 2 tbsp Italian Style Soffritto Seasoning Blend
- 1 tbsp olive oil
- Top with marinara, bruschetta, or sauce of choice!
Instructions
- Preheat the oven to 425 F. Line a baking sheet with parchment paper.
- To prepare the chicken, pat the chicken breasts dry with paper towels. Cut the chicken breasts horizontally down the middle. Season both sides of the chicken.
- Place the halved chicken breasts on the baking sheet. Top each piece with a tablespoon of pesto and use your spoon to spread it over the chicken.
- Bake in the oven for 20 minutes, or until well done.
- Place a piece of parchment paper in the tray of the air fryer. Place the frozen gnocchi in a single layer on the tray. Lightly drizzle or spray the gnocchi well with olive oil. Season with the soffrito seasoning blend.
- Air fry for 12-14 minutes at 400°F or until crisp. Enjoy with sauce of choice!
